This Festive Bikini – How to Make It

We present an easy interpretation of a drink featured on our latest cocktail list. It's a batch pre-mixed that is loaded with the flavours of a holiday season, which makes it excellent for a celebration. Reserve the remaining cordial for morning drinks, sweets, or to make another batch of the drink.

Bikini Recipe

Serves 10 people

To make the Clementine Syrup (yields 750ml)

300ml newly squeezed clementine juice
200ml fresh lemon juice
500g caster sugar

For the Cocktail (produces 850ml, enough for 10)

400ml premium vodka
100ml dry gin
150ml peach liqueur
200ml clementine syrup (see above)
A few cranberries, to garnish
Mandarin essential oil, as a final touch

Instructions

To prepare the Citrus Syrup: Combine all the items in a pan, heat until it reaches a light boil, stirring until the sugar dissolves. Then, turn off the stove and leave to cool down entirely. Transfer to a sterilised bottle, close it and store in the fridge, it will last for up to a month.

Preparing the Cocktail Base: Combine every spirits and syrup in a large bottle, leave to sit for one hour, then pass it through best through cheesecloth, to ensure it's perfectly clear.

To serve: Pour 85ml of your cocktail base into your stirring glass filled with ice, gently stirring carefully for about 60 seconds to chill. Filter to a chilled martini glass or similar, decorate with some cranberries and complete it by giving it a quick spritz of the essential oil above the glass.
